Whipped Frosting Recipe



We had another birthday celebration this past weekend. This time for my loving husband. We had a nice long relaxing day in which we did just about nothing. For us, it was a much needed break. I usually make all of our b-day cakes as I am too cheap to buy a good one from a bakery and the cheap ones at some of the local grocery stores are just not good. But, I also enjoy baking. The kids chose to have a vanilla chocolate swirl cake and my hubby's favorite frosting is a whipped frosting.
I was planning on making the cake from scratch, but ran out of energy. So I pulled out a boxed cake.


This whipped frosting is my favorite as well. Not too sweet. Light and creamy. None of this in on the list of a healthy diet, but necessary every now and again to celebrate.

Whipped Frosting

1 small container whipping cream
1 large box instant vanilla pudding
~1 cup skim milk
~1/2 cup powdered sugar

Start by whipping the cream. Place in stand mixer bowl. Using the whisk attachment, whisk away. I start on a lower speed and kick it up to a med/high speed after the first couple of minutes. Whisk until firm peaks form - usually several minutes.

While that is whipping, in a separate bowl, combine remaining ingredients. 

When cream is done, fold in the pudding mixture. And that is it! SOOOO yummy!

This is also good on some graham crackers.
