Peanut Butter Pie Makeover

I love peanut butter pie. Unfortunately, they are SOOOO not good for you. Loaded with fat and sugar. I have done a bit of a makeover with the recipe. It is still NOT 'healthy' but it is a TON better than the original. And well, I like to indulge from time to time (ok, everyday - but I am working on that).



I started with individual graham cracker pie crusts. Yes, you can certainly make your own, I just happened to have these on hand. And - I am lazy. I like shortcuts. If you are making your own, you can use half the amount of butter as normal and substitute the other half with a fat free vanilla yogurt. When I substitute the yogurt, I use about 2/3-3/4 of the amount called for (just less than a 1:1 substitution, in this case the exact amount doesn't really matter). And, I omit the sugar.

I didn't measure anything in this recipe - but since this is a no cook recipe, the amounts don't really matter. You can adjust based on your tastes. All measurement will be approximate.

3/4 cup PB (reduced fat and/or sugar is the best option if you have it)
1/2 cup fat free cream cheese
1 small banana (if you don't like banana flavor, don't add it)
1.5 cup fat free cool whip.

Mix all together and pour into the crust. Freeze.

Yup - it is that easy!

I LOVE these. Hubby didn't (but that is because he doesn't like bananas). Kid's liked them. Next round I will try without the banana and see if they like any better (yes, daddy's influence is strong).

  1. We don't have graham crackers here in Australia, but I will try another biscuit for the base and give this recipe a whirl. Oh and we don't have cool whip either, so I guess I could just make some whipped cream?

    1. No graham crackers! Not sure what I would do without those! Other options could include Oreos, Nilla Wafers, or anything that is crisp and can be crumbled easily. Yeah, Cool Whip is an American thing. Certainly whipped cream will work, but will be loaded with fat and calories, but will likely taste MUCH better. :-) My guess is you make your whipped cream without sugar-we add sugar to everything here. You may like it without that extra sweetness, but most Americans would not. Give it a try and let me know what you think.
